Vegetable Soup - Crockpot
I Love soup. I love HOME MADE SOUPS especially. that way I know what is actually in it, and can monitor what is in it and how much salt is actually in it (rather than the oh -so- salty canned soup.
Sure, on a sick-day i'll have a good bowl of Campbell's Tomato soup. (or Chicken Noodle) but those are sick days when I'm sick and just can heat something up.
Being that this is my first food blog - bear with me. I didnt take nearly as many pictures as I should have for this blog, but wanted to share it with you guys.
I also have to warn you *I RARELY MEASURE ANYTHING.* YUP. I don't measure. I just usually go with it... sometimes some measuring take place, but dont be surprised if you see some interesting descriptions of how I come up with these things. :)
OK back to this veggie soup. It's cold here in Texas so yesterday I decided a big crockpot of veggies sounded oh-so-good. so I dug out my crockpot (my best friend in the kitchen.) and dug out veggies in the fridge. Now, I knew that I had alot of random veggies that were about to Go bad - so keep that in mind. if you dont have something, but have something else, feel free to adjust this according to what you have in your fridge (unless if you have no veggies, then go to the grocery store first.) haha!
So here we go:
about 2 big ol' fistfuls of Kale (washed/chopped )
2 tomatoes (or 3 if you like more tomatoes.... )
1 onion (I used yellow onion... not sure how much it really matters....)
2 zucchini (these suckers were about to go bad in my fridge)
4 stalks of celery
4 carrots
1 can of black beans (washed and drained)
about a teaspoon of chopped garlic
The spices can vary - I made this a few weeks ago as well and did it more-so with rosemary, oregano, pepper, a LITTLE salt, onion powder..
THIS TIME though I did it a little different, I put some barbeque seasoning we have for a rub for a meat (I know, it's a soup.) but it really gave it a nice flavor.
bbq seasoning ended up being probably about a table spoon
black pepper - about half of a teaspoon
feel free to play with the flavors, though. :)
So I chopped everything up and put it all in crockpot.
I put mine on high for about 3 -3 1/2 hrs. my crockpot cooks super fast though - so adjust accordingly.)
