When I think about cucumber sandwiches I always think of fancy tea parties.... or England....
I've never had a "real" cucumber sandwich - like made all fancy like at a tea party.
Last week I wanted a healthy sandwich. and I ended up making this.
... because these were the ingredients I had on hand. turned out pretty good.
We haven't purchased lunch meat in a long time... (won't go into how bad it is for you) and sometimes i have chicken on standby to throw on a sandwich (but i didnt.) and i wanted a nice light sandwich.. .that's filling, refreshing, not over stuffing...
2 sliced of bread (we use wheat...)
cream cheese (enough to spread on the bread...)
6 thin slices of cucumber (or more, if you want more...)
feta cheese
lettuce
sliced (or chopped) tomato ( a few slices or however much you like..)
pepper
dried/chopped basil.
(any other spices or toppings you like for your sandwich
Spread cream cheese on the bread. put the thin slices of cucumber on. sprikle a little pepper and basil (and any other spices) on it, then put some lettuce, tomato, sprinkle on some feta, close up that sandwich and enjoy.
feel free to change it up if you'd like. try some kalamata olives on it!
