I love soups. I love cold weather because I can make and eat soup. Actually I hate the cold weather. but I like nice warm soup, hot coffee, hot chocolate and nice warm fires to sit next to during the cold weather :)
This soup is totally customizeable. basically if you dont have a veggie that I have listed (or don't like it) no problem, use another...
being that this is my first food blog post I have to have you understand the way that I cook.
Im not "normal" and actually measure things out and careful and everything.
nope.
..... except I do have to measure out stuff for baking. I'm not a good baker. I have to follow a recipe to a "t" and everything.
so here's how I made this wonderful soup yesterday all in my lovely crockpot.
Ingredients: (again, you can customize it!)
2-3 big handfuls of Kale (washed/chopped)
2-3 tomatoes (I did 2 yesterday, but think a 3rd one would have helped out a little more.)
1 onion
1 can of black beans (rinsed and drained.)
4 stalks of celery
4 Carrots
2 zucchini (I've also used yellow squash before)
1 container of Chicken broth
Spices: (yup, you can customize this too!)
I've made this soup before more with an "itailan-y" feel to it, and then yesterday I did more of a "rustic-bbq-y" feel....
with the
italian: i used Rosemary, oregano, garlic, pepper a bit of salt.... (there may have been more, but can't remember)
the the more bbq-y one yesterday I did a bbq rub that was intended for meat, but I thought it would be a good thing to try. it "hit the spot." I also did some pepper. that was it.
What I did:
chopped up all the veggies (except the beans)
put the broth in the crockpot
added all veggies
then I added the bbq seasoning and pepper.
and then had it cook for about 3.5 hours on high in the cockpot. (my crockpot cooks super-fast, so you may have to adjust the time.... )
