So my wonderful husband introduced me to a wonderful (and easy!) recipe.
Hard for me to even say "recipe" because seriously, its 3 ingredients, all put together. ( The word, "recipes" always make think of some kind of laborious concoction/ task that will be too complicated.... I'm learning to like that word "recipe"
Im learning to like figs. sometimes they aren't good, but i relaly like the nice juicy ones...
Last year there were NO figs in the area (that we saw) and we were heavily disappointed by the lack of fig crop :( This year though, Wonderful Husband was at Trader Joes and surprised me with the first package of Figs of the year!!! (yup, i got excited because I knew we would be able to eat the yummy fig "recipe"
Suggestions on when to eat this recipe:
For breakfast
lunch
snack
appetizer
as a meal for dinner (yes, we've done it... we added other fruits and cheeses as a nice light dinner)
have it for dessert. (seriously. could pass for dessert. - but I bet with a scoop of icecream it would be OH so Yummy!!)
Ingredients:
Figs
Goat Cheese (flavored or plain)
honey
Preparation:
Prepare a cookie sheet - just spray some vegetable spray so they wont stick to the cookie sheet when they go in the oven.
fig prep:
Wash figs thoroughly, but gently - because it's a very fragile fruit.
Slice the figs in half lay (backsides) down on the cookie sheet
the 'goody'
spoon a bit of goat cheese on each fig then drizzle JUST A LITTLE honey on top.
(seriously, if you go crazy with the honey, it can get messy.)
Warming:
Just warm these suckers in the oven for JUST A COUPLE of minutes.
I put the oven on broil. I don't really watch the time, but I know it's not more than 5 min. you just want them to warm just a touch.
OR warm them on a grill (we have a grill pan thing that we put them on and warmed them up just a touch while we were grilling the rest of dinner (again, just for a few minutes...)
---IF you don't want them warmed up, simply ignore the whole part about the cookie sheet and the warming. - we've done it that way too.. not as good cold - but still good. :)
