So, I LOVE cold pasta salads... you know pasta, with veggies, and some kind of dressing... I can eat them as a meal. ...
These are good for a pot luck, for a side dish, (as a meal like me.. I'm eating these leftovers right now for lunch.)
This past weekend I was searching for an easy pasta cold salad recipe... I wound up making up my own recipe. that means trouble. it's either going to be REALLY good or REALLY Bad. and as usual, means that I didnt measure anything ... Like so many of my other recipes this one is a "taste as you go" type of thing.
1 package of penne pasta
2-3 Roma tomatoes diced (or some grape tomatoes
~ 1/2 of an onion
a few Big handfuls of CHOPPED romaine lettuce (or spinach or salad mix)
Ceasar salad dressing (at least 1/2 of a bottle, or to your liking)
parmesan cheese (to top when you plate)
basil (to top when you plate)
-boil Penne pasta
-while pasta is getting boiled you can chop up your veggies
-cool pasta once it is cooked
-combine all in a large bowl and mix it all up really good. when you add the ceasar dressing add a little at a time, and taste as you go to see how it is...
(then chill, or go ahead and eat. - I think it is better after it's been chilled for a few hours - but that's to my liking.)
top with Parm cheese & basil if you'd like.
Next time I make this I'm going to make ahead and add some shredded chicken in it.
