We've made this dish a few different times now. each time really enjoying it.
I have managed to misplace the recipe that I went off of (that will teach me to pin it to my food section on Pinterest! HA!!)
Keep in mind that it's been a few weeks since we did this, so i dont remember a THING about how much ingredients I used :(
Ingredients:
Cod fish
bread crumbs (either with italian seasonings, or do what I did - and flavor up the breadcrumbs on your own [oregano pepper, onion powder, parsley... any way you'd like.]
We've been getting the fish from costco (so we get a TON of fish in the little package) this past time we used half one night, and then cooked the other half a few nights later
anyways - so the first night- all I did was preheat the oven (350?? If I remember correctly- i sprayed a baking dish, big enough for my pieces of fish.
After washing my fish (and realizing that we have a TON of fish, and decided to put half of it back in the fridge--
I cut the fish to be nice serving sizes. ( a little smaller than my hand??? I think?? basically not huge chunks and not little itty bitty pieces. make sense?)
i then had my breadcrumb / seasoning mixture in a bowl, put each piece in the bowl and got crumbs / pressed them onto the fish, then put it in the greased up pan....
i did this for the rest of my pieces.
baked it for somewhere between 20-30 min?? (I'm always paranoid about fish, because i dont want it to dry out, but I want it done.. basically - take a fork, if it flakes apart. it's done. take that sucker out! :)
that other half of the cod? we made fish tacos. I dont remember what we did though to cook it :( oops. i remember they were SUPER yummy, though!
